Preheat the oven to 190C fan
Grate the garlic into a microwave safe bowl and add the butter
Melt the butter in the microwave for 1 min until the garlic is frothing
Combine the cheeses, eggs, milk, butter, spring onion in a large bowl
Season with ½ tsp salt and freshly cracked pepper
Lay 2 sheets of filo onto your 23cm springform pan
Tear up the remaining filo and one by one gently mix it into the cheesy mixture with your hands - ensuring there are no clumps of filo
Pour the mixture into the pan and bake in the oven for 50 mins
Allow the pie to cool fully for 1 - 2 hours and then enjoy
