Wash and cube potatoes, slice sausage and onion, trim green beans, and mince garlic.
Heat 1 tbsp olive oil over medium heat. Add potatoes and cook 10–12 minutes until golden and tender. Remove from pan.
Add remaining oil. Brown sausage rounds 3–4 minutes until caramelized on edges.
Stir in onions and cook until soft. Add garlic for 30 seconds until fragrant.
Return potatoes and green beans. Sprinkle paprika, thyme, salt, and pepper.
Cook together 5–7 minutes until flavors meld and green beans are tender-crisp.
