Pre-heat your oven to 180C.
Add the eggs, egg whites, spinach, tomatoes, salt and pepper to a bowl or jug and whisk together.
Pour into a lined square-shaped baking dish and bake in the oven for 15-20 minutes.
Whilst the egg is cooking, divide the sausage meat into 4 equal sized balls.
Add them to a hot frying pan with a spray of oil and press them down using parchment paper and a spatula.
Fry the patties for a few minutes on each side until browned.
Slice and toast the muffins and slice the egg into 4 quarters.
Combine the honey, chilli flakes, chilli sauce and a splash of water in a bowl to make the hot honey.
Spread a thin layer of cream cheese onto each muffin half then layer up the egg and the patty.
Brush the patty with a generous amount of the hot honey on each side, then add the top of the muffins.
