Bake 320g of flour at 190 degrees for 15 minutes, then cool completely and sift.
Cream 200g of room temperature butter and 200g of sugar until 70% dissolved.
Add 2 room temperature eggs in 2 batches and mix well.
Add 2g of salt and 1 teaspoon of vanilla extract and mix well.
Add the baked flour, 3g of baking powder and 2g of baking soda to the butter mixture and mix until no powder is visible.
Add 200-300g of chocolate and 100g of nuts and mix.
Cover and refrigerate the dough for 30 minutes.
Divide the dough into 180-190g portions and shape into rounds.
Bake at 190 degrees for 12 minutes.
