Combine oats, almond flour, almond slices, and chopped pecans in a large bowl
Add cinnamon and cardamom to taste
Pour in extra virgin olive oil and honey
Mash in ripe banana(s)
Mix everything together with your hands, squeezing the mixture to form clusters
Divide mixture between one or two sheet pans, squeezing into clusters as you spread
Bake at 350°F for 20 minutes, rotating pans halfway through
Lower temperature to 325°F and bake for 15 minutes more
Allow granola to cool on the pan to achieve maximum crunchiness
Store in an airtight container
