Gradually mix dry ingredients into wet mixture until a soft dough forms. Avoid overmixing.
Roll tablespoon-sized portions into balls, place 2 inches apart on baking sheet, flatten slightly, and add sprinkles.
Bake for 8–10 minutes until edges are set and centers remain soft.
Allow cookies to cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
