Make the dressing: blend all dressing ingredients in a blender until smooth. Taste and season with more salt or acidity, as needed.
Make the topping: add all topping ingredients on a platter. Stir until combined.
Insert a chopstick in the center of each cob. Using a brush, brush all sides of the corn with the dressing.
Sprinkle the toppings on the corn and gently press them on the cob.
Serve right away.
