Preheat oven to 350° F. Line a 9×13 inch baking dish with parchment paper.
Bring the apple cider to a boil over high heat. Reduce the heat and simmer for 10-15 minutes, until reduced to ½ cup. Remove from the heat. Let cool.
In a large bowl, stir together the boiled cider, coconut oil, vanilla, egg, maple syrup, and apple butter, until combined. Add the flour, baking soda, apple/pumpkin pie spice, and salt. Mix until just combined. Fold in the apples. The batter will be thick.
Spread the batter evenly among the prepared dish.
In a bowl, mix the sugar, cinnamon, and grated butter until a clumpy sugar forms. Sprinkle the sugar over the surface of the cake.
Bake for 30-40 minutes, until just set.
