Vegan Nut-mushroom Whole Grain Spaghetti
  1. Put the pumpkin seeds, walnuts, 1 pinch of salt, 1 pinch of pepper, and the mushrooms in a food processor and chop everything.

  2. Heat oil in a pan and fry the mixture until the nuts are lightly browned. Add the garlic and tomato paste, as well as the soy sauce and fry for another 5 minutes.

  3. Deglaze with red wine, 400-500 pasta cooking water and simmer everything for 20-25 minutes.

  4. Add the fresh herbs and mix everything with the noodles.
