Sourdough Discard Banana Nut (or Banana Cinnamon) Muffins

    Instructions

  1. Heat oven to 350°F (or 325°F convection).

  2. Line a 12-cup muffin pan.

  3. Whisk bananas, discard, butter, sugars, egg, and vanilla.

  4. Stir together flour, baking soda, baking powder, salt, and cinnamon (if making the cinnamon version).

  5. Fold dry ingredients into wet until just combined.

  6. Fold in nuts if using.

  7. Fill muffin cups about ¾ full.

  8. Sprinkle with cinnamon sugar if desired.

  9. Bake 18–22 minutes, until a toothpick comes out clean.

  10. Cool 10 minutes before removing.
