Fry the onion and carrot until soft
Add the mince and cook until browned
Stir in tomato paste and spices and let them release their flavour
Add the mashed tomatoes
Add the potatoes and stir
Add enough water to just cover the potatoes
Simmer for about 20 minutes, until the potatoes are almost cooked
Transfer to a baking dish and bake at 170°C (fan) for around 40 minutes, until some of the liquid evaporates and the top starts to crisp
Mix all ingredients for the zalivka (yoghurt topping) and work quickly as the baking soda reacts with the yoghurt and makes it fluffy
Pour the zalivka over the musaka and bake for another 10-15 minutes, until golden
Serve warm with an extra spoon of yoghurt
