Preheat oven to 350°F (175°C).
In a large bowl or mixer, cream together the softened butter, brown sugar, and white sugar until smooth and creamy.
Add eggs, egg yolks, and vanilla; mix until fully combined.
Add flour, oats, baking soda, baking powder, and salt. Mix just until incorporated.
Fold in chocolate chips.
Scoop dough using a large cookie scoop (about 3 tablespoons) and place on a baking sheet, spacing evenly.
Bake for 11 minutes. Cookies will look slightly underbaked in the center — that's exactly what keeps them soft.
Let cool on the baking sheet for a few minutes before transferring to a wire rack.
