Bechamel
  1. Melt the butter in a large skillet

  2. Add the flour and cook until it smells toasty - it should not darken much you aren't making gumbo

  3. Add the milk, a little at a time, whisking between additions. Once all of the milk is added, add salt and continue whisking until mixture thickens. It is ready when it coats the back of a spoon.
