Pineapple Upside Down Cake
  1. Preheat oven to 350°F.

  2. Melt ½ cup butter in a 9-inch round baking pan.

  3. Sprinkle brown sugar evenly over butter.

  4. Arrange pineapple slices in a single layer over brown sugar.

  5. Place a cherry in the center of each pineapple slice.

  6. In a medium bowl, whisk together flour, baking powder and salt.

  7. In a large bowl, beat ½ cup softened butter and granulated sugar until light and fluffy.

  8. Beat in egg, then alternately add flour mixture and milk, mixing just until incorporated.

  9. Spread batter evenly over pineapple and cherries.

  10. Bake for 40-45 minutes, until a toothpick inserted in the center comes out clean.

  11. Allow to cool in pan for 5 minutes, then invert onto a serving plate.
