Preheat oven to 375°F.
In a greased 9x13 dish, mix rice, broth, enchilada sauce, tomatoes, peppers, onions, and seasonings.
Nestle raw chicken into mixture.
Cover tightly with foil and bake 45-55 minutes.
Remove from oven 15 min before finished cooking.
Stir in black beans.
Top with cheese and bake uncovered 10-15 minutes.
Let sit 5-10 minutes before serving.
Garnish with fresh cilantro, sour cream, avocado, tortilla strips, or even a side salad.
