Bloom Gelatin: Pour 2 tablespoons of cold water into a small bowl. Sprinkle gelatin evenly over surface. Let sit 3-5 minutes until thick and spongy.
Heat Water: Warm 1 cup of water to about 100-110°F. Use a kettle cooled slightly or microwave for 30-40 seconds.
Dissolve: Pour warm water over bloomed gelatin. Stir continuously for 30-60 seconds until completely clear with no granules.
Season: Add fresh lemon juice and Himalayan pink salt. Stir well until salt fully dissolves.
Sweeten: Stir in honey or stevia if desired.
Serve: Drink warm 15-30 minutes before your first meal. Or pour into a mold and refrigerate 2-3 hours for chilled gelatin cubes.
