Using an immersion blender or small blender, blend cottage cheese until smooth. Set aside
To a pan, add spinach and cook on medium heat for ~2 minutes or until wilted. While spinach is cooking, chop artichoke into bite sized pieces. Add artichokes to the pan and heat for ~3-4 minutes.
Add cottage cheese, spices, and shredded cheese. Cook on medium heat until everything is well combined and cheese is melted.
Serve over crackers and enjoy!
