Cut the chicken thighs into bite-sized pieces
Add chicken to a bowl with eggs, cornflour and salt
Mix until the chicken is well coated
Air fry or fry the chicken pieces until crispy and golden
In another pan add ketchup, soy sauce, honey, brown sugar, rice vinegar, garlic and sesame oil
Bring the sauce to a gentle simmer
Mix cornflour with a splash of water and stir into the sauce to thicken
Add the crispy chicken and toss everything together until coated in the sauce
Finish with sesame seeds and spring onion
