In another bowl, mix Greek yogurt, egg, coconut oil, and honey until smooth.
Combine wet and dry ingredients, then fold in chocolate chips.
Scoop dough onto baking sheet (about 2 tbsp per cookie).
Bake for 9-11 minutes until golden brown around the edges but soft in the middle.
Let cool on the tray for 5 minutes before enjoying warm and melty!
