  1. Crack the eggs into a bowl and set aside.

  2. Chop the onion into small pieces.

  3. Smash and mince the garlic.

  4. In a separate bowl, combine ketchup, soy sauce, oyster sauce, dark soy sauce, sugar, and a little water. Mix everything well.

  5. Heat a little cooking oil in a pan.

  6. Add the chopped onion and minced garlic to the hot oil. Sauté until fragrant, but do not let it brown.

  7. Transfer the sautéed onion and garlic into the sauce mixture.

  8. Pour the prepared eggs into the pan with the remaining oil.

  9. Let the eggs cook until the bottom sets.

  10. Pour the prepared sauce mixture over the eggs in the pan.

  11. Cover and simmer for 2 to 3 minutes, or until the eggs are set and have absorbed some of the sauce.

  12. Sprinkle with chopped scallions (optional).

  13. Serve over steamed rice.
