Shrimp In Chimichurri Sauce
  1. Mix all chimichurri ingredients EXCEPT red wine vinegar and olive oil and pulse blend.

  2. Put greens into a bowl and add in red wine vinegar and olive oil.

  3. Pat dry shrimp so it's nice and dry.

  4. Butterfly the shrimp by cutting a slit down the back of each shrimp.

  5. Season the shrimp with salt, pepper, cayenne, paprika, cumin, chili flakes and olive oil.

  6. Massage and mix well.

  7. Add one tablespoon olive oil to a pan / skillet on medium heat .

  8. Lay down the shrimp and cook ONE minute or less and then flip . Cook another minute. Mix. Total cook time should not exceed 3 - 4 minutes maximum or shrimp will be rubbery.

  9. Top with chimichurri sauce.

  10. Serve as an appetizer or main dish with rice 🍚 or pasta 🍝
