If using dehydrated hashbrowns, rehydrate them per the box instructions.
Cook your chicken in the oven or air fryer until crispy (400 degrees and check on them every 5 to 10 minutes until they are done), when your chicken is done cut it into smaller pieces for our tacos.
Mix and cook the country gravy mix per the package instructions and crisp up your hashbrowns.
Mix your pancake mix but add a little extra water, you don't want the batter to be too thick.
Cook your pancakes and then we are ready to assemble our tacos!
Start with a pancake taco base, then add a spoonful of hashbrowns, some chicken pieces, a drizzle of gravy, shredded cheese, and a pickle slice.
Feel free to add extra pickle if you love pickles.
