Preheat oven to 200°C.
In a baking dish, mix together peanut butter, red curry paste, garlic, ginger, soy sauce, sesame oil, coconut milk, and chicken stock.
Add frozen dumplings to the dish, making sure they're mostly submerged in the sauce. Add bok choy if using.
Sprinkle over the spring onions.
Cover with foil and bake for 40 minutes.
Remove foil and grill uncovered for 10 minutes to get a slightly golden top.
Serve hot, drizzled with chilli oil and sprinkle
