Start by salting up some boiling water.
Then just drop your potatoes in there and cook them for about 15-20 minutes, or just until they're fork tender.
While that's happening, throw a large pan in a 400 degree oven with about ½ inch of oil.
Once your potatoes are done, strain them off and begin to shake them in the strainer as you season them.
Now take your preheated, oily pan out of the oven and carefully lower in your potatoes.
Return these to the oven and roast for about 35-40 minutes, making sure to toss them a few times along the way.
Once they're totally done, strain them off onto a paper.
