1 tbsp olive oil
1 red onion, sliced
2 garlic cloves, minced
2 tsp smoked paprika
1 tsp chili flakes
1 tsp oregano
1 jar (400g) roasted red peppers, sliced
2 tins (800g) chopped tomatoes
1 jar (600g) butter beans, drained
1 packet (225g) halloumi, sliced
2 large handfuls fresh spinach
Preheat oven to 180°C (350°F).
Heat olive oil in an oven-safe pan over medium heat. Sauté onion for 8 minutes.
Add garlic, paprika, chili flakes, and oregano; cook briefly.
Stir in peppers and tomatoes; simmer for a few minutes.
Mix in butter beans and top with halloumi slices.
Bake for 20 minutes.
Stir in spinach and let it wilt before serving.
