Slow Cooker Potato Soup
  1. Add your diced potatoes, onions, garlic, vegetable broth, salt, and pepper into the slow cooker. Give it a gentle stir to mix everything evenly.

  2. Cover the slow cooker and cook on LOW for 6–7 hours or HIGH for 3–4 hours.

  3. Once the potatoes are tender, use a potato masher to mash part of the soup right inside the slow cooker.

  4. Stir in vegan butter, milk, heavy cream, sour cream, and cheddar cheese. Mix until smooth and luscious, then cook for another 20–30 minutes on LOW.

  5. Ladle into bowls and top with your favorite toppings.
