Eddy's Nigerian Stew
  1. Put 1-2 sliced onions, magi (boiluin/stock powder), 1tsp salt and enough water to cover the (hard) chicken

  2. Boil ~30min

  3. When the chicken is nearly done, add fish steaks. DON'T STIR You'll break up the fish!

  4. Continue to boil ~15min

  5. Blend tomato and scotch bonnets in a mixer

  6. Boil to reduce

  7. In 1cm peanut/raps oil, ½tsp salt, fry chopped onions and 4tblsp tomato concentrate, continue to fry and stir until the oil gets red

  8. Add blended tomato, bell pepper & scotch bonnets, fry ~25 min.

  9. Add a bit of water. Boil for 5 minutes.

  10. Add the tomatoes to the boiled chicken, don't drain first, you want the water.

  11. Serve with rice - parboil ~10 minutes, change the water to clean the rice, cook as normal (until water is gone and rice is done)
