Pre-heat your oven to 200c. Also line a large baking tray with baking paper.
In a large bowl, add the flour, oats, sugar and cinnamon. Mix until combined.
Add the melted butter and vanilla into this and mix until you get a crumbly mixture.
Add this onto your tray and bake for around 20-25 minutes, or until golden brown. Give your crumble a mix halfway through baking.
Once baked, leave aside.
Place a pan onto medium heat and add the butter. Let the butter melt.
Once melted, add the apples, sugar and cinnamon. Mix everything together.
Keep heating this on medium heat, mixing it every now and then, until the apples are soft. Use a fork to check this.
Take this off the heat, cover and leave aside.
In a large bowl, add all the ingredients for the French toast mixture. Whisk until combined.
Place a pan onto medium heat and add some butter to it.
Get a slice of your bread and dunk this into the mixture. Let this soak on both sides for about 30-60 seconds.
Take this out of the mixture, let the excess drip off, then place this into your pan.
Cook until golden brown on both sides. Then take this out of the pan and repeat with your other slices of bread.
Now that everything has been made, we can plate up.
Add 2 or 3 slices of your French toast onto a plate. Add some of the cooked apples onto this, and then add some of the crumble on top.
Serve with some caramel and ice cream, then enjoy!
