Prepare Peppers
Arrange peppers cut-side up.
Cook Filling
Heat oil. Sauté onion and garlic until soft, about 3 minutes.
Add ground turkey, break it up, and cook until browned, about 7 minutes.
Season with salt, pepper, and oregano.
Stir in black-eyed peas, cooked rice, and half the cheese. Mix well.
Bake Stuffed Peppers
Spoon filling into peppers.
Top with remaining cheese.
Bake covered with foil at 190°C.
Remove foil and bake until cheese is golden and peppers are tender.
