Ground Turkey Stuffed Peppers with Black-Eyed Peas

Prepare Peppers

  1. Arrange peppers cut-side up.

Cook Filling

  1. Heat oil. Sauté onion and garlic until soft, about 3 minutes.

  2. Add ground turkey, break it up, and cook until browned, about 7 minutes.

  3. Season with salt, pepper, and oregano.

  4. Stir in black-eyed peas, cooked rice, and half the cheese. Mix well.

Bake Stuffed Peppers

  1. Spoon filling into peppers.

  2. Top with remaining cheese.

  3. Bake covered with foil at 190°C.

  4. Remove foil and bake until cheese is golden and peppers are tender.
