Cut potatoes into even-sized pieces and place in salted water. Bring to the boil and simmer gently until tender (approx. 20-25 mins.)
Drain well and pass through a medium sieve. Place in a clean pan.
Add butter and milk to the potatoes, season and mix well with a wooden spatule to obtain a soft creamy texture.
Serve dome-shaped in vegetable dishes. Smooth and decorate with a palette knife or put in to piping bag.
