Cook ground beef in a pan
Add mirin, soy sauce, garlic, sesame oil, salt, and pepper to the beef
Cook until browned and finish with green onions and sesame seeds
Steam onion, zucchini, carrot, and spinach stems together until just tender
Bring the steaming water to a simmer
Add miso, anchovy broth coin, garlic, tofu, enoki mushrooms, and spinach leaves to the water
Simmer for 3-4 minutes
Top rice with steamed vegetables and bulgogi beef
Serve with miso spinach soup on the side
