In a Boston shaker, add the egg yolk, brandy, milk and winter syrup. Dry shake without ice for 20 seconds. Add ice and shake vigorously for 15 seconds. Double strain into a brandy snifter and add nutmeg over top of the drink to garnish.
Add all ingredients to a pot and whisk well until sugar is melted and brought to a simmer. Strain through a fine mesh sieve. Pick out the cinnamon sticks and put it back into the syrup to extract more flavour. Chill until ready to use.
