Moroccan Ginger-lemon Chicken Skewers

    Don’t marinate the chicken longer than 30 minutes. Any longer than that and the lemon juice and ginger will make it mushy.

  1. With a wand-style grater, use 1 lemon to grate 1 tablespoon of zest and squeeze 2 tablespoons of juice. In a large bowl, stir together the zest, juice, oil, garlic, ginger, cumin, coriander, salt, pepper, and 2 tablespoons of honey.

  2. Add the chicken to the bowl and toss to coat evenly. Marinate for at least 15 minutes, or up to 30 minutes.

  3. Meanwhile, preheat a grill to medium-high heat.

  4. Thread the chicken onto skewers, discarding any excess marinade.

  5. Grill the skewers, turning occasionally, until the chicken is cooked through and lightly charred, about 10 minutes.

  6. Transfer the skewers to a serving platter. Drizzle with additional olive oil and honey, if desired. Sprinkle with chopped fresh herbs.

  7. Serve the skewers with grilled lemon halves, if desired. Squeeze the grilled lemon halves over the skewers before eating.
