Cranberry Orange Walnut Bread
  1. Preheat oven to 350 degrees F (180 degrees C). Line a 9x5-inch loaf pan with parchment paper, so that a little bit of paper hangs out over the edges.

  2. Whisk together All-Purpose Flour (2 cup), Granulated Sugar (1 cup), Baking Powder (1 ½ teaspoon), and Salt (1 teaspoon) in a large bowl.

  3. Cut the Unsalted Butter (½ cup) into the flour mixture until it is pea sized and resembles course meal.

  4. In a medium-sized bowl, whisk together the zest and juice from the Orange (3), Egg (2), Sour Cream (⅓ cup), and Vanilla Extract (2 teaspoon). Pour into the flour mixture and mix gently until just combined.

  5. Fold in the Fresh Cranberry (1 ½ cup) and the Roasted Walnuts (½ cup).

  6. Pour batter into prepared loaf pan and bake in the preheated oven for about 1 hour until a toothpick comes out clean.

  7. Remove from oven and let cool on wire rack for about 15 minutes before removing bread from pan and letting it completely cool on a wire rack.

  8. Once cool, whisk together Powdered Confectioners Sugar (1 cup), ¼ tsp of Orange Zest, and Roasted Walnuts (¼ cup). Add Orange (1) one tablespoon at a time, stirring, until the desired thickness is reached.

  9. Place a piece of parchment paper under wire rack that the bread is cooling on and slowly pour glaze over the top of the bread.

  10. Slice and enjoy!
