  1. Combine the flour, salt and oil

  2. Add the water to the dough and stir with a wooden spoon to combine

  3. When the dough has cooled, knead for about 5 minutes until the dough is soft and doesn't stick to your hand or the work surface

  4. If the dough seems too wet add a little bit more flour, or if it's too dry add a little bit more water

  5. Divide the dough into 60g portions

  6. Roll each portion into a ball, and then roll out with a rolling pin into a circle. If the dough is sticking, lightly dust with flour

  7. Heat a pan over a high heat

  8. When the pan is very hot add the tortilla to the pan

  9. Cook for 30seconds -1 minute on each side, if there is still raw dough visible, cook for longer

  10. If the tortilla puffs up, tap down with a spatula

  11. Keep warm and use right away, or store in a dry place for a couple of days, or freeze for later!
