Jamaican Jerk Sauce Recipe

6 Scotch Bonnet peppers (chopped)

1 small red onion (chopped)

6 garlic cloves (chopped)

4 stalks scallions (end trimmed)

¼ cup soy sauce

¼ cup vinegar ((optional - use white vinegar or apple cider vinegar, to your preference))

2 tablespoons olive oil

Juice from half a lime

1 tablespoon freshly grated ginger

2 tablespoons brown sugar

1 teaspoon nutmeg

1 teaspoon allspice

1 teaspoon cinnamon

1 teaspoon dried thyme (or use fresh, if available)

Salt and pepper to taste (I usually use 1 teaspoon salt and 1 tablespoon black pepper)

Add all of the ingredients to a food processor. Process until smooth, or until you achieve the consistency you desire.
Use immediately. Store the leftovers in the refrigerator in an airtight container.
