Preheat oven to 325°F. Line a 9″ square pan with parchment paper.
In a large bowl, mix together the eggs, olive oil, 2 tablespoons honey/maple syrup, vanilla, cashew butter, flour, baking powder, baking soda and cinnamon, until well combined.
Remove ⅓ cup of the mixture into a smaller bowl. Stir in the cocoa powder and remaining 1 teaspoon honey/maple syrup.
Mix the chocolate chips into the vanilla batter.
Drop spoonfuls of batter into the baking pan, alternating between the chocolate and vanilla. Gently swirl with a knife to create a marbleized look. To flatten the top, pat down with a wet palm.
Bake 325°F for 20 minutes. Remove parchment paper from tin to cool.
