Sourdough Banh Mi

  1. In a stand mixer with hook attachment, combine all ingredients & knead until well incorporated

  2. Rest 10 mins

  3. Hand knead until smooth

  4. Form into a ball.

  5. Cover & rest for 2hrs in room temperature

  6. Divide into 9 equal portions and form balls and rest 15 mins

  7. Using rolling pin to flatten & shape

  8. Cover & proof until double in size (Do finger poke test)

Score & spray water on the dough surface

Preheat oven 230°c for 60 mins

Bake at 230°c 8 mins (Bottom heat without fan) (with steam)

Rotate the tray & bake at 210°c 15 until golden brown (without steam)
