Sourdough Banh Mi
In a stand mixer with hook attachment, combine all ingredients & knead until well incorporated
Rest 10 mins
Hand knead until smooth
Form into a ball.
Cover & rest for 2hrs in room temperature
Divide into 9 equal portions and form balls and rest 15 mins
Using rolling pin to flatten & shape
Cover & proof until double in size (Do finger poke test)
Score & spray water on the dough surface
Preheat oven 230°c for 60 mins
Bake at 230°c 8 mins (Bottom heat without fan) (with steam)
Rotate the tray & bake at 210°c 15 until golden brown (without steam)
