Salmon Burger

Cut one piece up into small cubes about pea size. Chop the second piece until it is nearly a paste.
Place all the salmon into a large mixing bowl. Add the garlic, shallot, Dijon mustard, egg, panko, salt and pepper. Mix until well combined.
Shape into 6 burgers. Transfer to refrigerate the patties for about 30 minutes.
Heat a non-stick skillet over medium heat and add oil. Place the patty in the skillet and cook for about 4 minutes on each side. Remove from the pan and repeat the process with the remaining 6 patties.
Place the butter in the skillet and heat over medium-high. Cook the burgers for 4 minutes on each side, turning once.
Combine all ingredients in a small mixing bowl for service.
