Preheat oven to 200°C / 400°F
Line a large baking sheet with parchment paper and drizzle lightly with olive oil
Grate the carrots and finely slice the spring onion
In a large bowl whisk together flour, water, olive oil, salt and black pepper
Add the grated carrots, sliced spring onion, chopped parsley, and grated Parmesan to the batter
Mix well so everything is evenly coated
Pour the mixture onto the prepared baking sheet and spread it out very thinly (about 5-7 mm / ¼ inch thick)
Sprinkle a little extra grated Parmesan over the top
Bake for 30 minutes, until golden, slightly crisp on the edges, and lightly caramelized
Slice and serve warm with a fresh green salad and boiled eggs
