Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
In a large skillet, brown the ground beef or ground turkey over medium heat until cooked through. Drain any excess grease.
Add the diced onion and minced garlic to the skillet with the cooked meat. Sauté for 2-3 minutes until the onion becomes translucent.
Stir in the chili powder, ground cumin, paprika, dried oregano, salt, and pepper. Cook for an additional 1-2 minutes to allow the flavors to meld together.
Pour in the sugar-free tomato sauce and beef or chicken broth. Stir well to combine. Simmer for 5 minutes to allow the sauce to thicken slightly.
Spread half of the meat mixture evenly in the bottom of the greased baking dish.
Layer half of the diced bell pepper and half of the sliced black olives (if using) on top of the meat.
Sprinkle half of the shredded cheddar cheese over the vegetables.
Repeat the layers with the remaining meat mixture, bell pepper, olives, and shredded cheese.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let it cool for a few minutes.
Garnish with freshly chopped cilantro and sliced jalapenos, if desired.
Serve the Keto Taco Casserole with optional toppings such as sour cream and guacamole.
