Garlic Butter Chicken Bites with Roasted Red Pepper Parmesan Pasta

Ingredients:

For the Chicken Bites:

1 lb boneless, skinless chicken breast

3 tbsp butter 🧈

3 cloves garlic, minced 🧄

½ tsp smoked paprika 🌶️

Salt and pepper, to taste 🧂

For the Pasta:

8 oz fettuccine or pasta of choice 🍝

1 tbsp olive oil 🫒

½ cup roasted red peppers, drained and chopped 🌶️

1 cup heavy cream 🍶

½ cup grated Parmesan cheese 🧀

Salt and pepper, to taste 🧂

Fresh parsley, chopped (for garnish) 🌿

Directions:

Cook the pasta according to package instructions until al dente. Drain and set aside.

Season the chicken: Sprinkle the chicken bites with smoked paprika, salt, and pepper.

Sear the chicken: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the chicken and cook until golden and cooked through, about 6-8 minutes. Add the minced garlic during the last minute of cooking, stirring until fragrant. Remove chicken from the skillet and set aside.

Make the sauce: In the same skillet, add olive oil and chopped roasted red peppers. Sauté for 2-3 minutes until softened. Add heavy cream and bring to a gentle simmer.

Add the Parmesan: Stir in the Parmesan cheese until melted and smooth. Season with salt and pepper as needed.

Combine: Add the pasta and chicken to the skillet, tossing to coat with the sauce.

Serve: Garnish with fresh parsley and an extra sprinkle of Parmesan if desired. Serve hot and enjoy!
