Preheat oven to 425°F.
Line 9x13 Pyrex with foil and spray with Pam.
Place breasts in pan. Season with garlic salt, pepper, and Italian seasoning. Drizzle EVOO over top.
Place in oven for 20 minutes.
Remove from oven, sprinkle parmesan over chicken, then add mozzarella to every piece, almost covering every piece.
Place back in oven for 5-7 minutes, or until chicken temps at 165°F and mozzarella is browning in places.
