Dot Cake Recipe
  1. Set oven to 350 degrees F. Grease a 9×13-inch baking pan and line with parchment paper.

  2. Whisk together flour, sugar, baking powder, and salt in a large bowl until fully combined.

  3. Add softened butter to the dry mixture and mix on medium speed until the mixture resembles coarse sand.

  4. Pour in milk, eggs, vanilla extract, and sour cream. Mix on medium speed for 2 minutes until the batter is smooth.

  5. Pour batter into the prepared pan and bake for 25 to 30 minutes until a toothpick inserted in the center comes out clean. Cool completely.

  6. Beat softened butter on high for 2 minutes. Add sifted powdered sugar one cup at a time. Add heavy cream, vanilla, and salt. Beat on high for 3 to 4 minutes until fluffy and stiff.

  7. Use a small round cutter matching the diameter of your cups to punch out 12 to 14 clean circles from the cooled cake.

  8. Place one cake round in each cup. Add a spoonful of buttercream. Add a second round if desired and frost the top with a smooth, flat layer of buttercream.

  9. Pour rainbow nonpareils onto a shallow plate. Press each frosted cup face-down into the sprinkles and lift straight up for an even coating.

  10. Serve immediately or cover and refrigerate for up to 4 days.
