Pulse slice ingredients in a blender a few times until mixture is combined and slightly sticky.
Press into a lined loaf pan.
Place into the fridge.
Melt chocolate and evoo together over a Bain Marie or in the microwave.
Combine well then top slice with it, sprinkling lemon zest before the chocolate sets.
Fridge/freezer for at least 30 mins before slicing, the firmer the better.
Store in the fridge or freezer and enjoy!
