Choose the right avocado, preferably Hass from Michoacan, Mexico. The perfect ripeness of the avocado is the most important step.
Cut the avocado safely by holding it from the bottom and slicing around the seed.
Remove the seed and scoop the avocado out of the shell.
Dice the avocado into smaller pieces for easier mashing.
Dice half an onion and add it to the molcajete.
Dice a serrano pepper and add it to the mixture.
Squeeze some lime juice into the mixture.
Chop cilantro and add it to the mixture.
Dice tomatoes and add them last to keep them chunky.
Use a molcajete to smash the onions, serrano, and cilantro into a paste. (Or Gringos can blend in a blender)
Mix the paste with the diced avocado, adding salt and more lime to taste. (Never add garlic)
serve with strong corn tortilla chips.
