Mix together all of the marinade ingredients in a bowl, then combine it to the chicken. This is best done in a ziplock bag!
Let it marinate until you lose patience, ideally 1-4 hours or even overnight.
Once ready to eat, preheat a pan with 1 tsp oil, then add the chicken skin side down.
Let the chicken skin crisp up a bit, about 3 mins, then flip and add the rest of the marinade sauce.
Simmer the chicken and the sauce until the chicken has cooked through fully and the sauce starts to reduce, about 10-15 minutes.
Allow the chicken to rest for 10 mins then slice and enjoy!
