Adobo Sheet Pan Chicken Dinner
  1. Preheat the oven to 400*F.

  2. Salt the chicken thighs on both sides generously. Coat in 2 tbsp of adobo seasoning and set aside.

  3. In a bowl add the sweet potatoes, bell peppers and red onions. Generously coat with olive oil so it is evenly coated. Season with salt and the remainder 1 tbsp of adobo seasoning.

  4. Spread the vegetables and potatoes onto a parchment lined sheet tray. Top with the chicken thighs and transfer to the oven. Roast for 35 minutes.

  5. Remove from the oven and serve.
