Preheat oven to 350 degrees. Slice the top of two heads of garlic off. Place each head of garlic in a bed of aluminum foil. Drizzle olive oil over each head of garlic and add salt and pepper. Wrap garlic in aluminum foil and bake 40-45 minutes until garlic is roasted and slightly golden brown.
Slice French baguette. Coat both sides of bread slices with a drizzle of olive oil. Bake about 15 minutes or until baguette is lightly toasted.
Add softened cream cheese, mayonnaise, sour cream, shredded mozzarella, raw garlic, and roasted garlic to a medium mixing bowl. Mix until combined. Add garlic powder, salt, pepper and fresh parsley. Mix until combined. Transfer dip to a baking dish.
Bake garlic bread dip for 35-40 minutes or until golden brown on top and bubbling. Remove from oven. Serve immediately with crusty bread or save for later.
