Banana Chocolate Chip Breakfast Bread

A healthier version of banana bread with enough protein to make it a satisfying breakfast.

    Instructions

  1. Preheat oven to 350°F.

  2. Blend the yogurt, cottage cheese, bananas, eggs, and vanilla until smooth.

  3. In a large bowl, whisk together the dry ingredients.

  4. Stir the wet ingredients into the dry until just combined.

  5. Fold in the chocolate chips (and nuts if using).

  6. Pour into a greased 9×13 pan.

  7. Bake 35–45 minutes, until the center is set and a toothpick comes out with a few moist crumbs.

  8. Cool completely before slicing.

Optional topping: Sprinkle a few extra chocolate chips over the top before baking.
